Position Summary:
As a Canteen Assistant at St Pancras, you will ensure the smooth operation of kitchen hygiene standards. This role assists the senior kitchen team in meeting the requirements of the day to day kitchen operations, food preparation areas and back of house areas. Work with the kitchen and food and beverage team to continually improve associate satisfaction by ensuring a five star approach to back of house areas. As a key member of the kitchen team, you will use your initiative and take a proactive approach to ensure the hotel high standards are achieved. You will report directly to the Chief Steward and present them in their absence.
You’ll need to know your stuff
- Every food item or dish should be prepared with care and with the end dish and product in mind.
- Ensure proper portion, and food presentation for all dishes
- Inform staff of menu specials and out of stock menu items throughout the meal period.
- Follow appropriate personal hygiene procedures to ensure food served to guests is safe for consumption, including disinfecting hands prior to handling food and wearing a hat/hairnet and proper footwear
- Follow and ensure compliance with food safety and handling policies and procedures, such as product rotation, First In-First Out (FIFO); dating, labelling, cleaning, and organizing coolers/freezers/storage areas; and Cold Chain compliance, across all food-related departments and areas.
- Ensure the quality of the food items and notify manager if a product does not meet specifications.
- Monitor the quantity of food that is prepared and the portions that are served in to control food waste and ensure that good food is not thrown away.
- Communicate any assistance needed during busy periods to the Chef to ensure optimum service to associates
- Prepare cold foods, including preparing salads, cold sandwiches, condiments, and dressings.
- Maintain the associate dining area, keep it clean, tidy and welcoming for all associates
- Replenish China, cutlery, cups & utensils for each service General Kitchen
- To adhere to and assist in the compliance of Health and Safety e.g. COSHH & Risk Assessments, including any Covid-19 specific cleaning or hygiene tasks.
- Ensure that all Fire regulations are maintained by making sure that the Fire Exits are not blocked.
- Be familiar with and practice the safe handling, care and storage of all equipment.
- To ensure that all maintenance issues have been recorded correctly, and that all mechanical and manual equipment are used as instructed
- Report any machine defects to the maintenance team and ensures that the correct action is taken.
